I have this Touch plate probe

Is there an alternative way to define the probe shape other than using the wisard and touch plate menu?
Or can I not use this probe with Acorn?

That conductive touch plate is very similar to the Avid one and will work just fine. Why are you looking for an alternative way to define it?

To get the correct dimensions, ensure the square hole placement is accurate. Or is it not important?

If you set up the Avid Touch Plate and change the dimensions to match your plate in the Wizard it should work fine.
If touching off a corner and setting X-Y-Z, the Z will probe in the center of the touch plate. It will be up to you to make sure that your bit is in the correct location for touching off Z.
All of the probing options in CNC12 or CHIPS won't be available due to 'missing corner' of your plate.

Yes, you set the dimension of the pocket, wall thickness on the two outside walls adjacent to the notch and the depth. Just like the Avid, I wouldn't even use "design your own".
